Black beans (500g)
Black beans have a mild, earthy sweet taste and velvety texture that hold their shape well. They are ideal with spicy flavours and hot seasonings.
Directions for use - soak the beans overnight in cold water. After soaking replace water and bring to a fast boil in a large pan. Let them cook for 10 minutes, then simmer for approx 30-45 minutes, or until soft. At this point they can be frozen in batches with some of the cooking water or used immediately.
