Lentils, red split (500g)
Lentils are an excellent source of B vitamins, iron, magnesium, potassium and zinc, as well as being a great source of plant-based protein and fibre.
No soaking required. Rinse and place in a saucepan with clean cold water, covering by about 3cm. Bring to the boil, then reduce heat and simmer for about 20 minutes. Alternatively, they can be added to soups and stews uncooked - make sure you have enough liquid or stock for the lentils to absorb.
